Ritz Rabbit Casserole With Rice
Ingredients
Rabbit:
1 large skinned de-boned and cleaned rabbit
Cut 1 large or 2 small rabbits into chunks
1/2 pint of no fat sour cream
2 small cans of drained pieces and stems mushrooms
1 can 98% fat free cream of celery or other creamed soup
Rice:
2 cups of water
1 cup of rice
Preparation
- Mix the rabbit meat, sour cream, mushrooms and soup together in a bowl.
- In a baking dish that can be covered melt a half stick of lite margarine.
- Spread melted margarine through out.
- Crush up 36 ritz low fat low sodium crackers in their original package without opening.
- Open and spread the cracker crumbs evenly over the margarine in the baking dish.
- Pour the creamed soup mix in the baking dish and spread evenly over the crackers.
- Top off with poppy seeds.
- Pre-heat the oven to 350 degrees.
- Cover and bake for 30 minutes.
- After baking for 5 minutes start the water boiling for your rice.
- When the water starts boiling add in the rice.
- Simmer the rice for the last 20 minutes of the bake time so everything gets done at the same time.
- Spoon Casserole over rice or serve separately.

Great Low Fat Easy and Quick Recipe.
Boil up the rabbit(s) in salt water to de-bone.
Try substituting noodles or mixed vegetables for the rice.
