Rabbit Hash

Ingredients

Rabbit:
1½ to 2 cups chopped cooked rabbit
1/3 cup bacon drippings or shortening
3 medium baking potatoes, about 1¼ lbs
3 medium onions, about 6 oz
½ tsp celery salt
¼ tsp salt
Fresh ground black pepper


Preparation

  1. Remove meat from rabbit bones and cut into small pieces with kitchen scissors or knife.
  2. Put drippings from previously cooked rabbit into skillet.
  3. Peel potatoes and grate coarsely.
  4. Pour grated potatoes into heated drippings.
  5. Grate onion and add to the skillet.
  6. Complete by adding rabbit and seasoning to the mixture.
  7. Cover then cook moderately fast until potatoes are browned on the bottom.
  8. Stir, flip over, cover again, and brown on the other side.
  9. Cook approximately 10 minutes.

Serves 4.

Tip

A delicious way to serve leftover rabbit.
