Hasen Pfeffer

Ingredients

Rabbit:
2 cups water
½ cup vinegar
3 tbsp sugar
1 tsp salt
Half of medium bay leaf
10 whole black peppers
1 cleaned and dressed rabbit which has been cut into serving pieces
3 tbsp butter or shortening
1 medium sliced onion
1½ tbsp flour
3 tbsp water
½ cup sour cream


Preparation

  1. Prepare a marinade by combining first 7 ingredients in a saucepan.
  2. Heat to boiling quickly then cool.
  3. Place rabbit in an enamel or glass bowl and cover with the marinade.
  4. Cover bowl and set in refrigerator over night.
  5. Lift rabbit from liquid and drain slightly.
  6. Brown in the hot butter over medium heat for about 15 minutes.
  7. Reduce heat and add ½ cup of the 2 cups strained marinade.
  8. Cover and simmer for 1 hr or until about tender.
  9. Add onion and a little more marinade and continue to simmer until the rabbit is very tender.
  10. Make a paste of flour and water and stir thoroughly into rabbit liquid.
  11. Allow to boil 2 ruin.
  12. Stir in the sour cream.
  13. Blend thoroughly and heat just to boiling.
  14. Then serve.

Serves 3 to 4.
