Fish, Corn and Apple Chowder

Ingredients

Fish:
8 slices bacon, cut into 1 inch pieces
4 bass filets (about 1 pound)
8 ounce bottle of clam juice
6 medium red potatoes, cut into ½ pieces
2 onions, chopped
2 tart apples, chopped
2 cups fresh corn kernels
2 teaspoons dried thyme leaves
1 teaspoon coarse ground pepper
1 pint half and half


Preparation

  1. Place bacon and fish into a dutch oven.
  2. Cook over medium heat for about three minutes per side.
  3. Remove filets from pan and set aside.
  4. In the same pan with bacon add the remaining ingredients saving the half and half and fish for later.
  5. Continue cooking, stirring occasionally, for 15 or 20 minutes or until vegetables are tender.
  6. Stir in the half and half and fish. Cook over low heat for 8 to 10 minutes or until chowder is heated through.

Serves 4.
