Fish, Corn and Apple Chowder
Ingredients
Fish:
8 slices bacon, cut into 1 inch pieces
4 bass filets (about 1 pound)
8 ounce bottle of clam juice
6 medium red potatoes, cut into ½ pieces
2 onions, chopped
2 tart apples, chopped
2 cups fresh corn kernels
2 teaspoons dried thyme leaves
1 teaspoon coarse ground pepper
1 pint half and half
Preparation
- Place bacon and fish into a dutch oven.
- Cook over medium heat for about three minutes per side.
- Remove filets from pan and set aside.
- In the same pan with bacon add the remaining ingredients saving the half and half and fish for later.
- Continue cooking, stirring occasionally, for 15 or 20 minutes or until vegetables are tender.
- Stir in the half and half and fish. Cook over low heat for 8 to 10 minutes or until chowder is heated through.
Serves 4.
