Baja Fish Tacos with Cabbage Salsa Recipe

Easy Fish Tacos

Ingredients

Fish:
1 medium onion, chopped
2 green bell peppers, chopped
1 clove garlic, minced
1 jalapeno pepper, seeded and chopped
2 tbsp. bacon fat or olive oil
3 tomatoes, peeled, seeded and diced
salt, chili pepper, ground cumin, a big pinch of each or more to taste
1 lb. cooked fish, in chunks
juice of 1 lime
1 sliced avocado
sour cream
8 taco shells
cilantro for garnish

Preparation

  1. In a heavy skillet, sauté the onions, peppers and garlic in the bacon fat or oil. Cook over medium heat until the onions are translucent and soft.
  2. Add the tomatoes and seasonings. Cook for about 10 minutes or until the sauce starts to thicken.
  3. Add the fish and lime juice and cook about 2 minutes or until heated through.
  4. Spoon into taco shells and garnish with avocado, cilantro and sour cream.

Serves 8.

Tip

Make good use of leftover cooked fish, especially cooked fish. Serve them with refried beans and sour cream.

Notes

This meal is fast and easy.
